CHOCOLATE CAKE/CUPCAKES

Yield: 18 cupcakes or 1x 6” cake



Ingredients:

All purposed flour 180g

Cocoa powder 60g

Sugar 250g

Baking powder 1tsp

Baking soda: 1tsp

Cornstarch 1tsp

Salt 1 tsp


Egg: 2

Milk: 140g

Black coffee: 135g

Canola Oil: 75g

Vanilla Extract: 1 tsp


Method:

  1. Preheat oven to 325 degrees. Line baking pans with parchment paper (bottom and sides).

  2. Add together Flour, Sugar, Cocao powder, Baking powder, Baking soda, Cornstarch and Salt. In a mixing bowl with a paddle attachment mix them at low speed.

  3. In a separate bowl, add milk, black coffee, oil, eggs and vanilla extract. Mix them well.

  4. Add the liquid mixture in Step 3 into the dry mixture in Step 2. Mix on low speed until they are incorporated. Scrape the bowl with a spatula to make sure everything gets combined.

  5. Pour the mixture into baking pans. Slam the pans down on the counter to let air bubbles escape.

  6. Bake at 325F for 20-25 minutes.
