EGGLESS COFFEE CAKE

As per many requests, I made this Eggless Cake and will try my best to have more healthful and special-needs baking videos. There are a wide range of recipes and baking skills, so it will take time for me to film them all.

Yield: 1 x 6” naked cake


Ingredients:

180g flour

200g sugar

1 tsp baking soda

1/2 salt


50g vegetable oil

220g coffee

1 tsp white vinegar

1 tsp vanilla extract

For bitter use stronger or more coffee , less sugar


Method:

  1. In a bowl, add all liquid ingredient together

  2. Using balloon whisk to break the eggs and mix the mixture

  3. In a mixing bowl, add all Dry ingredient together, mix on low

  4. Add liquid mixture into dry mixture, mix on low until incorporated.

  5. Divide mixture into cake pans lined with parchment paper

  6. Tap the pans onto surface few times to let air bubbles escape

  7. Bake 350F (top rack for my oven) for 20-25 minutes


COFFEE BUTTER CREAM (Yield: 6" naked cake)

Please note that this is American Butter Cream. General butter sugar ratio is 1:2, but I find it overwhelmingly sweet, so I adjusted the amount of icing sugar. Add more or less is up to your sweetness reference.


Ingredients:

227g unsalted butter, soft

200g icing sugar

2 tbsp strong, black instant coffee powder

1 tbsp water 2 tbsp heavy cream
