RED VELVET CAKE 6"
Ingredients:
All purposed flour 235g
Sugar 250g
Baking Powder 1tsp
Cornstarch 1tsp
Cocao powder 1tsp (optional)
Salt 1/2 tsp
Black coffee: 135ml
Milk: 140ml
Egg: 2
Canola Oil: 75g

Vanilla Extract: 1 tsp
Baking soda 1tsp
Vinegar 1 tsp
Method:
Preheat oven to 325 degrees. Line 6" baking pans with parchment paper (bottom and sides).
Sift together Flour, Sugar, Baking powder, Cornstarch, Choco powder and salt.
In a mixing bowl with a paddle attachment, mix them on low speed.
In a separate bowl, add milk, water, oil, eggs, vanilla extract, and red velvet emulsion. Mix with a balloon whisk lightly just enough to break the eggs.
Add the liquid mixture into the dry ingredients, mix on low speed.
Add baking soda and vinegar to the mixture in step 5. Mix on low speed until they are incorporated.
Pour the mixture into baking pans.
Tap the pans onto a surface to let air bubbles escape.
Bake at 325F for 20-25 minutes.
CREAMCHEESE FLAVOURED AMERICAN BUTTER CREAM
Ingredients:
Unsalted butter (soften in room temperature): 1lb (454g)
Powdered sugar: 2lb (907g) or less, depend on your sweetness preference
Heavy cream: 2 tbsp
Olive Nation cream cheese emulsion: 2 to 4 tsp (or to taste)
Methods:
In a mixing bowl, beat butter on low speed for few minutes until butter is smooth and pale in color .
Scrape the side of mixing bowl, add in first half of powdered sugar, continue beating.
Scrape the side of mixing bowl again, add in second half of powdered sugar, continue beating.
Add in heavy cream, cream cheese emulsion, food coloring (optional) and continue beating until it reaches desired consistency.
Place cream cheese into pastry bag fitted with piping tip of your choice, decorate as desired.
