Yield: about 600 gram syrup
It is advised to prepare this syrup few months in advance. But I normally prepare it just 2 weeks before using, and mooncakes turn out just as nice. You may also find Golden Syrup For Mooncakes in Asian grocery stores. In case you do not have time to make as well as finding the Syrup for Mooncakes, you can substitute it with syrup. Since common syrup is thinner than the one for Mooncakes, you will need to use it less than the amount indicated in recipe.
Ingredients:
250g Granulated Sugar
250g Brown Sugar
300 ml Water
30g lemon juice
2 slice of lemon , seeded.
Method:
Boil water
In a pot, add in sugar and brown sugar, then add hot water and stir.
Cook over medium-high heat until boiled, reduce to low heat.
Add lemon juice
Drop in lemon slices
Cook on lowest heat for about 45 minutes to 1 hour (more or less depend on your stove)
Note:
Do not stir sugar when cooking starting from step 3.
Define consistency: For mooncake consistency, total weight of finished syrup in this recipe is about 600g.
