VANILLA CAKE/CUPCAKES

Yield: 18 cupcakes or 1x 6” cake

Vanilla cake is great in term of flavour combination; it goes well with many cake fillings. My favourite is with lemon curd, butter cream and fresh berries.

Ingredients:

Flour 240g

Sugar 250g

Cornstarch 1tsp

Baking Soda 1tsp

Baking Powder 1tsp

Salt 1/2 tsp


Water 135g

Butter Milk (can also use Milk) 140g

Vegetable Oil 75g

Large eggs 2

Vanilla Extract 1tsp


Method:

  1. Preheat oven to 325 degrees. Line baking pans with parchment paper (bottom and sides).

  2. Sift together Flour, Sugar, Baking powder, Baking Soda, Cornstarch and salt. In a mixing bowl with a paddle attachment mix them at low speed.

  3. In a separate bowl, add milk, water, oil, eggs and vanilla extract. Mix them well.

  4. Add the mixture in Step 3 into the mixture in Step 2. Turn on mixer at low speed, mix until they are incorporated. Scrape the bowl with a spatula to make sure everything gets combined.

  5. Pour the mixture into baking pans. Slam the pans down on the counter to let air bubbles escape.

  6. Bake at 325F for 20-25 minutes.
